Jonathan Didier Pabiot Pouilly-Fume Prelude 2020

Introduction

One of the most important wine region’s of the Loire Valley that produces the leading white grape, Sauvignon Blanc, Pouilly Fume has inspired the world with its extraordinary wine-making techniques.
This particular series from Domaine Jonathan Pabiot comes from vines aged 4 to 10 years. Planted on clay-limestone and flint clay soils in the commune of Pouilly sur Loire. The aging is carried out in stainless steel vats on the lees of fermentation for approximately 6 to 8 months.
Racy, flinty, tangy and wild, the Pouilly-Fume Prelude 2020 is most flexible when it comes with pairing any kind of food from seafood, meats, cream pastas and cheeses

summary

As a strong white wine, the Pouilly-Fume Prelude’s dramatic flavors are not going to be subdued by most foods. Pairing perfectly with HENRI’s Crab Linguine in accentuating the dish’s ocean flavors, and Poitrine de Porc in balancing the dish’s richness with the wine’s un-matched acidity.
