Introduction

Domaine Alain Mathias is located at one of the best vineyard sites that has a unique soil type known as Kimmeridgean, a distinctive mix of linestone, clay and fossilized oyster shells. The soil in combination with the cooler climate gives Chablis its distinctive crisp flavor as well as the lovely pale gold-green color.

Fresh and vibrant, Chablis has transporting aromas of green apples, lemon zest, spring flowers, and characteristic flint and chalk notes.

Chablis is nicknamed ‘thirst-quencher’ because of its superb qualities of refreshing citrusy acidity. While it is perfect on its own, this Chablis reaches its full potenial when it is paired with HENRI’S Taramasalata; exposing the ocean notes from the cod’s roe and seaweed from the dish and deepening the minerality of the wine.
